Shortbread:
Fancy:
Robin Mattice, Stamford, CT
Robin Mattice's Classic Shortbread Recipe
Spray shortbread mold pans with a non-stick vegetable oilWarm oven to 325 F
Leave one stick of butter out @ room temperature, ¼ lb – ½ cup
Use one cup of regular unbleached, unsifted flour
Add 1/3 cup confectionary sugar, unsifted
Squirt in ¼ teaspoon of Vanilla
Knead together until smooth on a floured board
Press into the 9 x 9 pan or pie pan, about ¼” deep
Prick entire surface with a fork
Bake in oven for 30-35 minutes until slightly browned
Cool in pan for 10 minutes
Loosen edges with a knife, flip upside down & tap one edge
Cut into serving portions
Paint raised images with colored food coloring, green & purple
